Bonnet Rotisserie

Every Bonnet Classic is custom-built, letting you choose the components that best reflect your cooking style. Your select components will be added to a single piece of 3-mm thick stainless-steel titanium alloy that radiates heat to the entire top surface. So you can warm plates and hold sauces directly from almost any point on the suite. And since the heat is designed to move toward the center, heating output is lowered to maintain a comfortable work area.

While there may be material differences between our Classic and
Modern suites, each gives you uncompromised quality and flexibility.

French (Solid) Hot Tops

Temperature: 536 ºF (outside edge) to 1022 ºF (center)

Sizes: 700mm, 800mm or 900mm wide x 550mm deep

Power: 38,000 BTU/hr., and 3 sizes

Construction: Chicanes on the reverse of the cast iron for efficient heat distribution

Open Salamander Broiler

Power: 3 ceramic brick radiant-heat gas burners, 41,000 BTU/hr. total input; maximum heat dissipation

Construction: Stainless steel with top-mounted burner assembly, 2/1 GN size

Added feature: Open on all four sides for easy access

Bain-Marie

Power: 2.9 kW electric element with thermostatic control to boiling point

Construction: One-piece with radiused internal corners to aid cleaning; flush inset with a 1/1 GN volume and integral fill font

Added feature: Removable base, perforated for different height containers; removable overflow drain

Radiant Burners

Power: 2.9 kW

Construction: Single or double ceramic radiant tops in a flush and sealed enclosure. Heating element includes overheat protection

Overshelf

Construction: 20mm x 40mm stainless steel framework with removable perforated paneling; rests flush with the surrounding frame

Added feature: Optional water taps at chosen points

Ovens

Power: 12.5 kW Gastronorm 2/1 electric oven or 41,000 BTU/hr. input gas oven.

Construction: 20mm-thick cast-iron base/sides, cast-bronze door liner for even temperatures/consistent heat retention

Storage Cabinet

Construction: Seamless stainless steel with polished, satin finish inner linings, radiused corners to aid with cleaning; double-skin doors with integral insulation, fully removable

Storage Cabinet

Polished stainless steel paneling or hardened enamel-fired color paneling; lacquered brass or nickel control valves; lacquered brass or nickel decorative metal work, framing and corner detail; mirror polished front edge detail to top
